Berry Breakfast Bake


This little number came from The Good Housekeeping Magazine. It takes a bit longer to prepare than I usually like for morning meals, but it's totally worth it.

 

In a greased baking dish, combine 1 cup each old-fashioned oats and quinoa, 1/2 cup roasted almonds, 3 Tbsp chia seeds and 1 tsp baking powder. Pour a mix of 2-3/4 cups milk, 1 Tbsp melted butter and 1 Tbsp vanilla on to. Top with 3 cups berries and bake at 375 for 45 min. Serve with Greek yogurt and drizzle with honey as desired.

 

I actually had all of these ingredients on hand, except for the berries, so I wasn't put out much with this recipe. Avie loved it, of course. The only thing I would change when I make this again would be less quinoa... I like quinoa, but it seemed to overpower the oatmeal.
