Every once in awhile I will make a vegetarian meal for my family. I think it's good to think outside the "chicken" and fill yourself up with yummy, healthy veggies. So, last week I chose this Roasted Vegetable Chili with Cornbread Biscuits recipe and it took the cake! I am craving it right now, actually.
The awesome thing about this recipe is that it cooks all together on one baking sheet. It's like a one pan meal, but in the oven... so you REALLY don't have to think about it. Easy-peasy.
I didn't change anything about this recipe. It's delicious as-is, and even Avie loved it.
But it gets better; I used the chili as quesadilla filling! She didn't even realize that she was jamming veggies in her face because it was covered in melty-cheesey tortilla goodness.
