Blue Apron Edition: Avie's Been Eating
We've been getting Blue Apron.
It comes once a week, and contains all the ingredients for two, four-serving, meals. It's been a life-saver for me, because for those two nights- I don't have to search for recipes, raid our refrigerator or scramble out to the grocery store.
The other reason I like it is because I am the mother of a 2-year old, culinary-snob who won't eat the same thing more than two times, unless there is a large break in between. For example; if I make tuna-salad, she will eat it for two days but won't eat it on the third day.... and I better wait a couple of months before making it again, or she still won't eat it.
The girl likes variety.
Which is where Blue Apron comes in. I know that she will USUALLY eat whatever her Daddy and I are eating- and these recipes force us to eat "outside the box"... which is funny because it actually comes IN a box.
So, Avie's Been Eating:
-Persian-Style Chicken and Crispy Rice with Summer Squash, Currants & Lemon Yogurt
-Sweet Pepper Chicken with Ditali Pasta and Spinach
-Chicken Marbella with Roasted Potatoes and Summer Squash
There are a bunch more recipes that we've tried, but these were my favorites- and since we are getting meals for 4, there are always left-overs for someone's lunch the next day!
