I think I've said it before: snack time sucks.
Okay, well maybe not in those exact words. But snacks (the afternoon snack especially) are the toughest "meals" of the day for me. Maybe it's because I've never been a huge snacker, myself, or because I'm extra careful about giving Avie healthy foods. Whatever the reason, I just get stuck sometimes.
There is one snack that I've discovered to be a hit every time I make it for Avie, though: turkey rolls!
Bread-less Turkey Roll
1 Slice of deli turkey meat (watch out for Nitrates!)
1/4 Avocado, sliced
1 Tablespoon of Goat Cheese
1/2 Tablespoon of Hummus
Lay turkey slice out flat, spread the hummus on the turkey slice, then top with goat cheese and avocado slices. Roll it up and serve it
Not everyone is a fan of deli meat, and that's totally okay! You can still make a variation of this little snack gem, feel free to experiment!
1/4-1/2 of a Whole Wheat Pita
1/4 Avocado, sliced (or more)
1 Tablespoon of Goat Cheese (or more)
1/2 Tablespoon of Hummus (or more)
Cooked chicken thighs or breasts *optional
Simply spread the hummus in pita pocket, add avocado, goat cheese and chicken, if using. Eat
The last little variation I will throw at you is using a cream cheese, broccoli puree instead of goat cheese. Whaaaaat?? I know.
Cream Cheese Broccoli Puree
1/2 cup of steamed broccoli (this works better for picky eaters if the broccoli is super soft)
1/4 cup of cream cheese (more or less) divided
**Just bear with me here, I obviously don't write recipes for a living
Using a food processor, mix broccoli with cream cheese and pulse until blended to desired consistency. I usually
throw the broccoli in and then add a little bit of cream cheese at a time and mix until it looks spreadable.
Add salt to taste
Use this instead of the goat cheese on either of the above recipes.
