So, my child has had a fairly interesting diet lately and I figured that some might benefit from seeing what she's been eating.... I know sometimes I have to go back to old cooking/shopping/food lists to get out of a cuisine rut.
None of this food actually sounds strange to me... Avalyn has always eaten a variety of foods. However, I've had a number of people comment on her awesome diet. I think for some mommies it's just hard to think of kid-friendly/toddler-friendly grub. Also, I've read that it can take something like 7-15 times for a kiddo to accept a new food. That makes it tough for parents dealing with a picky eater!
I mean... how many times are you going to have to clean peas up off the floor before you give up, right?
Yesterday, my Avie ate-
Breakfast: Overnight Chia Pudding over oatmeal, with blueberries, banana and pear slices
Snack: my homemade granola bar (I'm not posting my recipe yet because I think I can find a better one), grassmilk yogurt, blueberries
Lunch: half a black bean burger patty (organic and frozen from costco- they've become quick and easy lifesavers for mealtime) topped with my homemade guacamole, broccoli sauteed with garlic butter and then topped with shredded cheddar cheese
Snack: Gluten free pasta with coconut oil and salt, black olives and sliced ham (real stuff, not deli meat)
Dinner: Salmon patty, pan seared in butter (and seasonings), steamed carrots and the Chia pudding leftovers for dessert
Today, my Avie ate-
Breakfast: Pressure cooker apples and pears.... it didn't turn out quite like I expected but she enjoyed it anyway. It ended up like an apple/pear sauce. I had some finely chopped walnuts that I dumped on top for a little added fat.
Snack: Kefir yogurt and blueberries (Avies' latest obsession is blueberries) and then she begged for some of the cauliflower I had just steamed... yes- begged for it.
Lunch: Leftover spaghetti (noodles cut small) over mashed potatoes and a big side of steamed broccoli.
Snack: Mashed potato Quesadilla: one whole wheat tortilla (folded in half) and filled with shredded cheddar cheese and mashed taters. Oh, and a side of blueberries of course.
Dinner: Steamed broccoli and cauliflower with a side of homemade shredded chicken taco filler, topped with guacamole
