Growing up, tuna fish sandwiches were always a treat on weekends. My brothers and I would scarf them down with a side of potato chips and baby carrots, mmmm.... But it wasn't until just recently, when I made it for my husband, that I realized what a good dish this was for Avie.
It contains healthy fish (Omega, anyone?), salt and fat. I plopped a spoonful on Avalyn's tray and she ate it up!
Here's the recipe:
1 6 oz can of tuna (or salmon- either one works), drained
2 hard-boiled eggs, chopped
1/2 a small white onion, finely diced
3 dill pickle spears, chop 2 for the tuna and just go ahead and eat the 3rd
2-3 tablespoons of mayo
Mix the first 4 ingredients in a bowl. Add mayo, one tablespoon at a time as needed.
