Apple date pancakes

I dare you not to drool when you read this apple date pancake recipe!

 

Okay, so breakfast is hard, right?  First of all, there are only so many breakfast foods you can choose from.  I mean, you've got your eggs, breakfast meats and cereals, yogurt, fruits and smoothies, and then you have waffles, pancakes and crepes (the GOOD stuff).

 

Secondly, breakfast is FIRST thing in the morning.  Your child is starving because they've been fasting all night and all you want is a hot cup of coffee!  I haven't had a HOT cup of coffee in over a year.... it's cold by the time I drink it.  You want to know why?

 

Breakfast.

 

For me, personally, it's deciding WHAT is for breakfast that really ruins my morning. Staring at an open refrigerator does not get me to my hot coffee very fast.  So, I've started collecting a couple good, basics, that I can whip out.  I'm fast at eggs.  I will finely, and quickly chop up some chives and ham then toss them into the skillet with butter and some salty, garlicy eggs.  BOOM!  But, sometimes Avalyn doesn't want eggs.

 

Or cereal.

 

Or yogurt.

 

So, we discovered very early that Avie will always eat pancakes.  First it started with a "just add water" pancake mix that took about 5 minutes to prepare.  Then, since I'm all about a healthy baby, I started adding bananas and chopped walnuts to the mixture.  And, then I made apple cinnamon pancakes- which the whole family enjoyed.

 

Well... the other morning I got a bug up my butt about the off-white color of the pancake mix and thought she would benefit from some good, old fashioned, whole wheat flap-jacks instead.  I thought of apple, then I thought of dates, and since The Google has everything, I found the apple date pancake recipe.

 

Now, here are the answers to the two questions I KNOW you are asking right now: Yes, Avalyn loved them.  And YES, I adjusted the recipe:

 

I used 1/2 whole wheat flour and 1/2 an Almond, Walnut, Pecan flour blend from Pamela's Products.

I used chopped walnuts instead of pecans

I didn't have buttermilk, so I used milk and extra butter

I DID NOT make the syrup

*Avie eats her pancakes with a little coconut oil or butter only.  She just doesn't need the extra sugar in my opinion.

 

My pancakes came out a little thick (I think because of the buttermilk substitute) but they were still delicious.

 

ENJOY!  And hey, Mamma, you can make these the day before and store them in the fridge.  Save yourself some blurry-eyed mixing and

 

measuring in the morning.
