It's seriously easy, and Avalyn loved it! I would recommend having a "backup plan" dinner in case your little one doesn't like curry... but having said that, this is a very mild curry flavor.
Here's a couple notes:
ADD CAULIFLOWER! I steamed some separately and added them in at the end, leaving the pot to simmer a bit longer so the flavors fused nicely. You can't even taste the cauliflower, but it adds some nice texture.
Second, this makes a ton of broth! So have some extra filler ingredients on hand if you want a "beefier" soup. So, a few extra mushrooms and shrimp.
Lastly- I never buy anything that's low fat IF it's a healthy fat and if it's for my little Avie. The coconut milk I used was full fat. There was literally a solidified hunk of fat on the top of the milk. PERFECT!
